Better Than My Usual Breakfast
Soft in the middle, full of warm blueberries and so easy to prepare. It felt like a comforting weekend bake, but I made it on a busy weekday morning.

No. Everyday ingredients from your regular grocery store, with simple swaps in place of refined sugar. Every recipe ends with what to use when your store doesn’t have something — and what changes when you use it.
That’s the whole point of the book. More than twenty years of taking things out of food without the food getting sad about it. No artificial aftertaste — and nobody at your table is going to ask what’s different about it.

My promise to you
I didn’t write any of this to sell you something — I wrote it because it changed my own kitchen, and I wanted it in yours. If something isn’t right with your file, write to me and I’ll make it right.
“I’ll be honest, I almost didn’t buy this. I’ve tried healthy dessert books before, and they usually either taste like cardboard or ask for a long list of ingredients I never keep in my kitchen. This collection felt different from the first recipe. I made the banana peanut butter mousse on a busy Sunday afternoon, expecting another diet substitute. Instead it was creamy, rich and genuinely satisfying. My husband tasted it without knowing what was in it and went back for another spoonful.”
— Margaret H., age 56, Virginia, US
“I’ve always been skeptical of recipes that promise a healthier version of a classic treat. When I saw the avocado chocolate mousse, I was convinced it would taste strongly of avocado. I was completely wrong. The texture was smooth and the chocolate flavour rich enough to feel like an actual dessert rather than a compromise. Nobody at the table guessed the main ingredient.”
— Denise T., age 59, Texas, US
“After years of trying to make more thoughtful choices around dessert, I had become tired of recipes that were either complicated or full of expensive specialty ingredients. The almond flour cinnamon cookies were such a pleasant surprise. The instructions were clear, the ingredients easy to recognise, and they were genuinely enjoyable with my afternoon coffee.”

Fresh, Simple and Actually Good
Light, creamy and pleasantly lemony without being overly sweet. The oat base came together so quickly, and the bars looked homemade in the best possible way.

My New Fall Favorite
Soft, warmly spiced and much more homemade than I expected. They didn’t need frosting to feel like a proper treat, and were still tender the next morning.

Connie Russo
57. 20+ years behind a stove
Who I am
My name is Connie Russo. I'm 57, third-generation Italian-American, and I've been cooking since I was tall enough to see over the counter.
For more than 20 years I cooked professionally for people who had just been handed a list of what they could never eat again. No sugar. No wheat. No salt. And by lunchtime it was still my job to put a plate in front of them that they actually wanted to finish.
That is where I learned what healthy cooking really is. Not a word on a label. A craft. How to take a thing out of a dish without the dish getting sad about it. What to put in its place. Which swaps hold up and which ones taste like punishment. 20 years of that, every single day, for people who had no other option and no patience for excuses. You don't learn it from a book. You learn it plate by plate, and after 20 years there isn't much left I haven't taken out of something and put back better.
Then I found my mother's tin. Over 200 handwritten cards, and not one of them finished. Every single one says q.b., quanto basta. As much as is enough. Nobody ever wrote down how much.
So that's what I do now, at 57. I write them down, and I write down the part everybody leaves out.

No. I’m a cook, not a doctor. I can tell you exactly what’s in a dish — what you should be eating belongs to someone licensed to answer it.
